A thick moulded bar with a filling of kunafa strands toasted in ghee and folded through pistachio. It snaps, and then a beat later it crunches — which is the whole point, and the part most versions get wrong.

What this is
A hundred-gram moulded bar, walled thick enough to snap properly, filled end to end with kunafa pastry toasted in ghee and folded through pistachio. Finished by hand with a contrast drizzle and left to set before it is boxed.
Two to choose from. Dark is the less sweet of the pair and lets the cocoa lead; white is creamier and pushes the pistachio forward. The filling is the same in both, so the difference is genuinely a matter of which you prefer rather than which is better.

Dark Chocolate
Bitter-edged and grown-up. The cocoa pushes back against the pistachio instead of sitting under it, and the kunafa reads louder because there is less sugar around it.
White Chocolate
Milky and soft, and the reason the trend spread the way it did. White chocolate lets the pistachio show its colour and its salt, so the filling tastes greener and more obvious.
