Almost every kunafa dessert in India starts with frozen kataifi, shipped in and thawed. It works. It also tastes like it travelled.
We spin ours in our own kitchen. The strands go into ghee within hours, which is the difference between a crunch that lasts and one that goes soft by the third piece. It costs us more and it takes longer, and it is the single reason people describe Belloria as crisp a week after opening the box.
