A kunafa nest cannot be pressed out by machine. The strands have to be gathered, wound around a form and set down without crushing, and it takes a trained pair of hands about the time you would spend reading this paragraph.
We spin the dough in our own kitchen rather than buying frozen kataifi, and the strands go into ghee within hours. That is the difference between a nest that is still crisp in week three and one that has gone soft by the weekend.
